This Fresh Vietnamese Vermicelli Shrimp Bowl is delicious. I will be making more Vietnamese foods because the fresh flavors are so good.
Cilantro and lime are one of my favorite combinations and when pair with this amazing sauce this dish comes to life.
I really enjoy the textures in this dish from crunchy cucumber to the mild fresh snap of the vermicelli noodles this is a great dish. And let’s not forget the peanuts. There are so many flavors and textures here, its hard not to love it.

Ingredients
Sauce ( Nuoc Cham )
1/4 cup rice vinegar
1/4 cup fish sauce
2 Tbsp sugar
1 lime juiced
1 garlic clove
1/2 tsp birdseye pepper flakes
Bowl Ingredients
1 lbs shrimp
1 package vermicelli noodles
1 lbs shrimp (peeled and deveined)
1/4 cup fresh chopped mint
1/4 cup fresh chopped cilantro
1/2 cup crushed plain peanuts
1/4 sliced radish
1/2 cup cucumber
Instructions
Make the vermicelli noodles and set aside (boil for 12 minutes then rinse with cold water)
Most of the work in this dish is prep work. Cut up all of the vegetables.
make the sauce by adding sugar, vinegar, fish sauce, lime juice, pepper, and garlic. I use an immersion blender to make sure the sauce is smooth.
To build a bowl start by putting vermicelli noodle in a bowl, top with all toppings then pour the sauce over top. toss a little to coat everything evenly. Enjoy
