This is an excellent Instant Pot BBQ Pulled Pork Sandwich when you are short on time and it is also great on a budget. I really like this dish because the pork comes out tender and juicy but not watery like some of the so-called BBQ restaurants I have tried. You can always tell if the meat came into contact with water or steam, it’s just not very good in my opinion.
This Instant Pot BBQ Pulled Pork Sandwich recipe is ready in about 2 hours and the pork itself is cheap like $10 and a bottle of BBQ sauce, so if you are on a budget but love bbq pulled pork sandwiches, this is for you!
With the spices and everything I think it was somewhere around $25 which is great when you can get 4-8 sandwiches out of this.
The key to a great tasting pulled pork sandwich is to make sure and seal the meat uptight. This is so water doesn’t get into the pork and the meat cooks in its juices.
You can see the pork below resting in its juices after cooking. We like to retain that amazing liquid to keep the pork tender and flavorful.

- 3.5 Lbs pork loin
Dry Rub Ingredients
- 1 Tbsp onion powder
- 1 Tbsp salt
- 1 Tbsp brown sugar
- 1 Tbsp garlic powder
- 1 Tbsp smoked paprika
- 1/2 Tbsp chili powder
- 1/2 tsp black pepper
- 1/8 tsp cumin
- 1/4 tsp cayenne pepper
- 1/2 Tbsp dried thyme
- 1/2 Tbsp dried rosemary
Cube the pork roughly, you want around 3" square chunks and place into a large bowl.
Add the dry rub ingredients to the pork and mix well. You want to make sure you get all of that spiced goodness into all of the meat.
Line a separate large bowl with 3 layers of tin foil. you want to make the sheets long enough to hang over the edges of the bowl by about 4 inches.
Put the pork into the tin foil-lined bowl and wrap all of the edges so that you have basically balled the pork up inside a tin foil ball with the seems at the top.
Once the pork is sealed up tight, place it on top of the rack in the instant pot.
Now fill the instant pot to halfway up the side of the tin foil and no higher. We do not want the water to get into the tinfoil seems at the top, we want the pork to cook in its juices for amazing flavor.
Put the lid on your instant pot and push the pressure cook button
Cook on high pressure for 90 Minutes
When done release the pressure and shred the pork apart with a fork. You will want to reserve all of those meat juices that were left in the tinfoil to store the meat in. The juices add a lot of flavor to the meat.
We used brioche buns in our and lightly toasted the bread.
We used a bottled sauce on our sandwiches and there are some really great sauces available today. Sonny's BBQ Sauce is what we used. Enjoy!
