This Basil and Sun Dried Tomato Creamy Pasta with Spinach is great. If you love the fragrance of sun-dried tomatoes and garlic cooking, you will love this recipe.
We enjoy Italian food a few times per week. I mean how can you not love pasta unless you have some sort of allergy to pasta of course.
This is different than many of the red sauce pasta that we make and it is a welcome change. With the addition of spinach and sun-dried tomatoes, this is a winner.

1 Lbs Thick Spaghetti
3/4 Cup Sun-Dried Tomatoes
1 Cup Shredded Parmesan Cheese
1/2 Cup Fresh Chopped Basil
6 Cloves Garlic Chopped
2 Cups Half and Half
12 Oz Package Fresh Spinach
1 Tbsp Butter
2 Tbsp Olive Oil
1/2 Tbsp Paprika
1 Pinch Crushed Red Pepper Flakes
1 tsp Salt
Go ahead and make the pasta according to the directions on the package.
Have the chopped ingredients ready to go.
Add the olive oil to a pan on medium-high heat. Add the garlic and sun-dried tomatoes and saute for 2 minutes.
Next, add the half and half and salt. Bring this to a boil then lower the heat and simmer for 4 minutes.
Add half of the basil. I like to add half to the sauce and save the rest to put on top.
Add red pepper flakes and finally the spinach.
Once the spinach has wilted, go ahead and add the cooked, drained pasta and mix it up well.
Serve right away.
